Gardener's Supply Company


This has to be one of my favorite companies! A lot of their products are made of recycled material, and biodegradable products! I actually bought my carbon filters from them for my kitchen composter. If you get a chance, make sure that you check them out....They have EVERYTHING!

I have so much more to talk about, but don't have the time currently. I will be back with more! Gotta love the summer schedule!

Recipe: Butternut-Corn Cakes

I just whipped up this concoction this morning, looking for something different to try for the kids. Thankfully, it did not turn out bad and they ate it all! For the amount of butternut squash soup I added, you could barely taste it. (and I added a lot!) Great way to get the kids their veggies! I even invited my friend Lori over to eat them with her daughter! A+ I eyeball my amounts to get my texture right, so I really don't have cup sizes of anything. It should still be the consistency of pancake mix.

Cornbread mix (I used Marie colander's from Sam's club)
Organic Butternut squash soup

Mix the cornbread mix with 1/2 the amount of water called for. Then add the Organic Butternut squash soup for the remainder 1/2. Mix together to get the desired consistency of pancake mix.
Pretty easy huh?!

The taste is more cornbread with a hint of butternut squash. The texture is obviously cornbread texture, so they break a bit easier (for the little kids) They taste great with syrup, or Jelly!

Recipe: Organic Quiche



This is a recipe I got from a friend of mine, who in turn got it from a friend of hers. However, I used all organic ingredients. (minus the onion.) It was awesome!


1/2 Cup Organic Zucchini

3 Organic eggs

1/4 Cup Oil

1/2 Cup onion

1/2 Organic Shredded mozzarella

1 Cup of Organic premade biscuit mix (the cold stuff found in the fridge aisle similar to Pillsbury dough boy stuff.) LOL!

1 handful of Organic grated cheese





Mix up all the ingredients in a bowl and put it in a square pan. Bake on 375 degrees until brown.

Recipe: Chicken Empanadas



This was my first time making them and they came out so nice! However, I could not find anything in my kitchen to make the circles out of the dough, so I used a glass. BEWARE: They may not look like much in the beginning, but once you fry them, wow! They are like 2 times the size!!



1 block of cream cheese

1 tbs or more of cilantro

2 cups of shredded finely cut (food processor works best) Organic Chicken. (or regular chicken)

1 bag of frozen pizza dough (or your very own home made pizza dough~whichever works best!)





First cook your Chicken all the way through, then slowly melt the cream cheese on low in a saucepan. After it has all been melted add the chopped cilantro and 2 cups of chicken to the cream cheese.


Let the frozen pizza dough thaw (about 4 hours) Once thawed, roll out with a bit of flour, and use a round cookie cutter, or a regular glass you drink out of, and cut the circles. Take a table spoon of the mixture, and fold the dough in 1/2 press with your fingers to seal.


Put them in your deep fryer (or however you will fry them) until the pizza dough puffs up and turns a nice golden brown.

Recipe: Turkey Mushroom Marsala Burger



Okay, my kids (and probably most kids) HATE Spinach, mushrooms and cheese. Well, here is a recipe that they actually did eat! I'm still amazed that they loved it, and had no idea how good for them it was!!! You can not taste the spinach or the mushrooms! for a healthier option on bread we use whole wheat buns.


1 pound of ground turkey

1 1/2 cups of finely chopped mushrooms

1 1/2 cups of finely chopped spinach

1 egg

1/2 cup of dried chopped garlic

Marsala cooking wine

Italian style breadcrumbs

Block of shredded Mozarella Cheese






chop mushrooms until finely chopped put in a small bowl and marinate in marsala wine for about 10 minutes. Mixing it until they are all drenched. Then chop the spinach while you are waiting for the mushrooms to marinate. Add all ingredients (including the remaining marsala wine from the marinade bowl) in a large mixing bowl to the ground turkey. Add the Breadcrumbs last so you can adjust the texture of the burgers to your liking, top with the shredded mozarella, Cook on a grill or skillit and Wha la!

My name is Rhea and I am mom to 5 boys ages 8, 6, 4, 2 and 1. I have always tried to make the "Green living change", but due to lack of support and constant bad mouthing about my decisions by overly influential family members, I have never really done my full conversion.

Well, since I am now my own person~and have a lot less "influence and criticism" in my life, I have decided to go full swing into my green conversion. I am doing everything that I can to reduce my family's footprint on this planet, with much help from those who matter most to me...my boys..(and the older hunky type of boy) LOL! There is only so much I can do now, because we have the possibility of moving to a new home, but I want this house as green as I can.

In this blog I want to share all my recipe's that I come up with, and my thoughts on green products and issues. I am still in a learning process, and I want to learn from everyone and anyone I can. I am excited about this and I hope to make a lot of new Green friends, and teach my "ungreen" and "Green Learning" friends everything that I learn!
